Our Philosophy

Carisi cuisine does not follow trends. It follows the seasons, the rhythm of the gardens, and the work of farmers and shepherds from the Sicani Mountains. Every dish is an act of respect: for the ingredient, for who grows it, and for who receives it. We do not chase complexity. We look for the truth of flavor, the gentleness of cooking, and elegance born from simplicity. Our pasta is handmade, our bread rises slowly, and our vegetables arrive from the garden the very same day.

Seasonality

Our menu changes with the rhythm of the territory. In spring: broad beans, artichokes, fresh ricotta. In summer: tomato, aubergine, catch of the day. In autumn: mushrooms, pumpkin, ragù. In winter: soups, legumes, long braises. This is not an aesthetic choice: it is the most honest way to cook.
